Salmon Quinoa cakes

  • 1 cup cooked quinoa
  • (2) 6 oz cans boneless, skinless wild salmon
  • 1/2 teaspoon salt free lemon pepper seasoning
  • pinch of coarse salt
  • 2 eggs
  • 2 tablespoons oil, for frying
  • lemon wedges for squeezing on after cooking :)
Instructions
  1. In a large mixing bowl, gently combine quinoa, salmon, lemon pepper, salt, and eggs. Divide evenly to form 6 patties.
  2. In a large nonstick skillet, heat oil over medium heat. When oil is hot, place patties into pan and cook for about 5 minutes on each side, until golden brown.
  3. Take patties out of pan and place on a paper towel to cool and absorb any excess oil. Squeeze lemon over salmon patties and sprinkle with additional salt to taste while still warm.

Vege-cheese soup

4cups chopped potatoes
2cups chopped carrotts
1/2 cup chopped onions
2 tsp salt
3 chicken bullion cubes
4 cups water

Combine the above cook 20mins.  Then add

1 - 10oz frozen bag of brocoli
3 1/2 cups milk

Melt in separate pan melt the following to pasty consistency,
1/2 cup butter
1/2 cup flour
1/2 TBS dry mustard

Add this to veg/milk. Then add 1 lb cut up velveeta cheese.
Stir frequently and watch closely so it doesn't scorch.

This is a yummy soup that we had at Becky's baby shower!

Au jus sandwitches

1 beef rump roast (4 pounds)
2 tablespoons canola oil
2 large sweet onions sliced
6 tablespoons butter
5 cups water
1/2 cup soy sauce
1 package onion soup
1 clove garlic
1 loaf French bread
Swiss cheese

In a pan brown roast on all sides in oil. Add to crockpot. In same pan sauté onions in 2 T butter. Add sautéed onion, water, soy sauce, onion soup, and garlic in crockpot. Cook all day on low.
Shred meat before serving.

5 min before serving... Broil sliced & buttered French bread until golden brown.
