Linnea's Crockpot Spaghetti Sauce

1 pound Italian sausage or ground beef (I do half and half)
1 large onion, chopped
1 clove garlic
1 can diced tomatoes
1 can tomato sauce
1 can tomato paste
1 can stewed tomatoes
1 tsp. beef bouillon
2 Tbsp. minced parsley
1 Tbsp. brown sugar
1 tsp. dried oregano leaves
1 tsp. dried basil leaves
1 tsp. salt
1/4 tsp. pepper

Cook sausage/ground beef with onion and garlic. Place all ingredients in crockpot. Cook on low for 6-8 hours. Serve over hot spaghetti. May make ahead and freeze. Makes 6-8 servings.

Chicken Croquettes

Karen Bair’s recipe. Nana and I made this recipe with leftover turkey and excluded the sherry. We sprayed the tops with Pam and baked it in a 350 degree oven for 25 minutes. We turned them over half way.
 * for the sauce - use 1 cup broth and 1 cup milk & a very tiny squirt of mustard

Crockpot Bacon Pork Loin

INGREDIENTS 
3 pound pork loin, trimmed of excess fat
 1 tablespoon canola oil 
salt and pepper, to taste 
4 garlic cloves, minced 
⅓ cup light brown sugar 
8 slices thick cut bacon 


Rub the tablespoon of canola oil and add Kosher salt and fresh cracked black pepper to taste. Add the garlic and brown sugar to the top of the pork. Wrap the pork with the bacon (I wrapped all the way around, if you want to drape them over the top you can as well.) Place carefully into the slow cooker and cook on low for 4-5 hours. If you finish the cooking time and for some reason the bacon is not as crispy as you would like, remove the pork and put it on a baking sheet in the oven on broil for 2-3 minutes (keep the pork in the middle of the oven, not too close to the top).

Tater tot Breakfast Casserole

INGREDIENTS:

2 lb hot breakfast sausage
  • 1 (30-32oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1-1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 8 eggs
  • 2 cups milk

INSTRUCTIONS:
 Preheat oven to 350 degrees. In a large skillet, cook sausage until no longer pink. Drain fat. In a large bowl, toss together tater tots, cooked sausage and cheeses. Pour into a lightly greased 9x13-inch pan. Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over tater tot mixture. Bake uncovered for 60 - 70 minutes, or until eggs are set.

Vegetarian Crockpot Enchilada Casserole

I did this recipe yesterday and everyone loved it! I actually got it from Family Circle and they call it Black Bean and Quinoa Enchilada Casserole, but I changed the name. The great thing about this is that it was so easy to put together and tasted great. I made a few changes to the recipe and will include both original and the changes I made.

Spray crockpot with nonstick cooking spray, and then add the following in order:
1 can (15.5 oz) drained and rinsed black beans
2 cups thawed frozen corn
2 cans (10 oz.) Rotel diced tomatoes with green chilies (From past experience, I know 2 cans is too spicy for my family, so I only did one can Rotel and then one can or just regular diced tomatoes)
1 can (15 oz) mild enchilada sauce
1 1/4 cup uncooked quinoa
1 cup water
1/2 tsp salt
1/4 tsp pepper
Stir in 4 oz. cream cheese with chive and onion (I used regular cream cheese and sprinkled in some onion powder)
Add one more can (15 oz) enchilada sauce
Top with 1 1/2 cups shredded cheese (It calls for Tex-Mex cheese, but I used colby-jack because that's what I had.)
Cover and cook on low for 6 hours or high for 4 hours.
Top with sour cream, diced avocado, cheese, green onions, or, as most of my family did, Fritos.

One more note: I couldn't find the mild enchilada sauce in the 15 oz. cans so I bought three 10 oz. cans and used 1 1/2 each time it called to put it in. Happy cooking!

Baked Spaghetti

I made this dish a few weeks ago from a recipe I found on Pinterest, but I guess I didn't actually pin it. I've been wanting to make it again, but I switched it up a bit more to my liking. I think it turned out really well this time.

10 oz. angel hair or thin spaghetti pasta
1/2 pound gr. beef/turkey
1/2 pound gr. sausage
1/3 cup onion
1 jar spaghetti sauce
1 package cream cheese
grated mozzarella cheese

Brown meats with onion. Drain any excess grease. Add spaghetti sauce and heat. Cook pasta to al dente directions. Drain and mix in cream cheese. Pour half of the spaghetti meat mixture into a 9 x 13 pan, then layer the pasta on top of that, and pour the rest of the sauce on top of the pasta. Sprinkle with mozzarella cheese and bake, uncovered, at 350 for 20-25 minutes, or until bubbly and cheese is melted.

Taco Pasta Bake

I made this last night and everyone liked it, so I thought I'd share. It was quick and easy, so that is a definite plus! Also, on the site I got the recipe from (canadianmomscook.com) some of the people that commented said they added a cup of salsa as well. I am going to try that next time. You could also add corn or other veggies if you like.

Ingredients:

  • 1/2 - 3/4 of a bag of large noodle pasta like ziti 
  • approx. 1lb of ground beef
  • 1 pkg/envelope of taco seasoning
  • 1C water
  • 1/2 pkg of cream cheese (about 4oz)
  • 1 1/2C shredded cheese (I used colby jack)
Directions:
1. boil pasta until just cooked, drain, run cold water over it
2. brown ground beef
3. mix together taco season and 1C of water, pour over cooked beef and let simmer for about 5 minutes until the liquid has reduced
4. add the 1/2 pkg of cream cheese to the beef mixture, stir until melted and combined, remove from heat
5. put pasta in your casserole dish or pot, mix in 1C of the shredded cheese
6. top pasta and cheese with beef mixture, gently mix until the pasta is coated
7. top with remaining 1/2C of shredded cheese
8. bake at 350 uncovered for approx 30 minutes

Salmon Quinoa cakes

  • 1 cup cooked quinoa
  • (2) 6 oz cans boneless, skinless wild salmon
  • 1/2 teaspoon salt free lemon pepper seasoning
  • pinch of coarse salt
  • 2 eggs
  • 2 tablespoons oil, for frying
  • lemon wedges for squeezing on after cooking :)
Instructions
  1. In a large mixing bowl, gently combine quinoa, salmon, lemon pepper, salt, and eggs. Divide evenly to form 6 patties.
  2. In a large nonstick skillet, heat oil over medium heat. When oil is hot, place patties into pan and cook for about 5 minutes on each side, until golden brown.
  3. Take patties out of pan and place on a paper towel to cool and absorb any excess oil. Squeeze lemon over salmon patties and sprinkle with additional salt to taste while still warm.

Au jus sandwitches

1 beef rump roast (4 pounds)
2 tablespoons canola oil
2 large sweet onions sliced
6 tablespoons butter
5 cups water
1/2 cup soy sauce
1 package onion soup
1 clove garlic
1 loaf French bread
Swiss cheese

In a pan brown roast on all sides in oil. Add to crockpot. In same pan sauté onions in 2 T butter. Add sautéed onion, water, soy sauce, onion soup, and garlic in crockpot. Cook all day on low.
Shred meat before serving.

5 min before serving... Broil sliced & buttered French bread until golden brown.

Classic Lasagna

1/2 pound bulk Italian sausage
1 pound ground beef
1/2 cup chopped onion
3 garlic cloves, minced (or garlic powder)
2 cans diced tomatoes, undrained
1 can tomato paste
1 can tomato sauce
1 teaspoon each sugar, dried oregano and basil
1 teaspoon salt
1 teaspoon pepper, divided
1 carton (15 ounces) ricotta cheese
1 carton (16 ounces) cottage cheese
3/4 cup grated Parmesan cheese, divided
1 egg
1/3 cup minced fresh parsley
1 package (12 ounces) lasagna noodles, cooked, rinsed and drained
2 cups (8 ounces) shredded mozzarella cheese
1 cup mixed Italian blend cheese

In a large saucepan, cook the sausage, beef, onion, and garlic over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato paste, tomato sauce, sugar, oregano, basil, salt and 1/2 teaspoon pepper; bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes or until thick, stirring occasionally. In a small bowl, combine ricotta, cottage cheese, 1/2 cup Parmesan cheese, egg, parsley and remaining pepper. In a greased 13-in. x 9-in. x 2-in. baking dish, layer a fourth of the noodles, a third of the ricotta mixture, a fourth of the meat sauce and 1/2 cup mozzarella cheese. Repeat layers twice. Top with the remaining noodles, sauce and Parmesan. Cover and bake at 400° for 45 minutes. Sprinkle with remaining mozzarella; bake, uncovered, 10 minutes longer. Let stand 15 minutes before serving.

Yield: 12 servings.

Terriki Bowl


Boneless skinless chicken thighs
1 recipe Terriki Sauce
diced carrots
chopped cabbage
green onions
mushrooms
*any other veggies can be added

In crock-pot add boneless skinless chicken thighs and Terriki sauce. Cook on low for 3-4 hours.
Cut meat into cubes to use in terriki bowl.

30 min before serving: heat oil in a pan and cook vegetables.

Serve terriki chicken, veggies and sauce over steamed rice.

Cafe Rio Pork and Dressing

Cafe Rio Creamy Tomatillo Dressing

1 package Hidden Valley Ranch
1 cup mayo
1 cup cilantro, chopped
2 cloves garlic, chopped
3 tomatillos - peel off paper, chop
1/3 - 1/2 cups buttermilk, to consistency you want
1/4 tsp. cayenne pepper (optional)

Put in blender and mix.


Shredded Cafe Rio Pork


3 lbs pork
16 oz. bottle of chunky salsa (blended in blender so chunks are gone)
1 can Coke
2 cups brown sugar

Place pork in crock pot and fill it 1/2 way up the pork with water.
Cook on High for 5 hours. Drain off water. Cut pork in thirds. Mix
together sauce ingredients and put on top of pork. Cook an additional
3 hours on high. Shred pork with forks. Leave it on low until ready to
serve.

Chicken Salad Sandwich

2 cans chicken
2 stalks celery, finely chopped
1 small onion (or less)
3/4 cup grapes, halved
1/2 cup mayo
1/4 cup sliced almonds
1/3 cup cashew halves
salt and pepper
Mix together and put on bread. 
*I have also substituted cucumbers for grapes.

Easy Sausage and Rice

I don't really have a recipe for this.  We learned to make it from a friend who learned it on his mission.  (I can't remember what country, sorry!)  This is easy and we all love it.
1 package kielbasa, sliced
cooked rice (I use one cup uncooked.)
eggs (I use six, but you could use more or less.)
Cook rice.  Cut up kielbasa and heat in skillet.  Scramble eggs and cook in pan. Mix in rice and salt and pepper to taste.  You can add soy sauce if you like, but my kids don't, so we add it if we want it.  Not much to this, but it is yummy!  You could also add a little olive oil in the pan while you cook it all, if you want.

Shoyu Chicken

1 cup soy sauce
3/4 cup water
3/4 cup sugar (brown or white)
2 cloves garlic, mashed
grated gingerroot to taste
2 1/2 lbs. chicken thighs
Place everything in crock pot and cook on low 4-5 hours.  Serve with rice.

Hamburger Stroganoff

1/2 cup minced onion
1 clove garlic, minced
1/4 cup margarine
1 lb. ground beef
2 Tbsp. flour
salt and pepper to taste
1 (8 oz.) can mushrooms, optional
1 can cream of mushroom soup
1 cup sour cream
2 Tbsp. parsley
Saute' onion and garlic in margarine over medium heat.  Add meat and brown.  Add flour, salt and pepper, and mushrooms; cook for 5 minutes, stirring frequently.  Add soup and simmer, for 10 minutes.  Stir in sour cream.  Heat through.  Sprinkle with parsely.  Serve over noodles or rice.  Makes 4-6 servings.

Chicken Pasta Salad

1 package bow tie pasta, cooked according to package directions
1 package rotini pasta, cooked according to package directions
2 cups red grapes, cut in half
2 cups celery, chopped
1 20-oz. can pineapple tid-bits
4 green onions
4 cooked and diced chicken breasts
2 cups cashews
Dressing:  1 bottle coleslaw dressing, 1 cup mayonaise
Put first 7 ingredients in a large bowl.  Mix together the dressing and mayo and mix all together.
(You can also add 4 diced apples and 1 can water chestnuts, if desired.)

Cheese Pie (Quiche)

One pie crust
3 beaten eggs
1 1/2 cup evaporated milk
1/4 cup sliced green onion
dash ground nutmeg
1 Tbsp. flour
6 slices bacon, cooked and crumbled
1/4 tsp. salt
1/8 tsp. pepper
1 1/2 cups shredded Swiss cheese
Place pie crust into pie pan.  Put bacon and green onion in pie crust.  Toss flour into cheese and add to pie crust.  Mix eggs, milk, and spices.  Add to pie and bake at 350° for 35-40 minutes or until knife comes out clean.  Let stand 10 minutes.

Pumpkin Waffles


2 cups flour
2 Tbsp. brown sugar
1 Tbsp. baking powder
1/2 tsp. salt
1/2 tsp. pumpkin pie spice
1 1/2 cups milk
1 cup canned pumpkin
2 egg whites
2 Tbs. oil
Mix flour, sugar, baking powder, salt, and pumpkin pie spice.  Make a well in the center.  Mix the other ingredients and add all at once to the dry; mix well.  Cook in waffle maker.
This is one of our favorite fall dishes!

Taco Salad

1 lb. hamburger with onion, salsa, taco seasoning
8 oz. salad dressing and 1 bag of Doritos (If using Nacho Doritos, use Catalina dressing.  If using Ranch Doritos, use Thousand Island dressing.)
3 medium tomatoes, cut up
1 cup shredded cheese
1 can olives, sliced
1 head of lettuce
Mix all together in a salad bowl and serve!
