Becky's Strawberry Pecan Pretzel Salad

This is one of my all-time favorite things that I will always associate with Becky! Kaela and I are usually trying to find the balance between eating the whole bowl and feeling sick!

1 cup crushed pretzels
1/2 cup chopped pecans
3/4 cup brown sugar
3/4 cup melted butter
3 cups diced strawberries
8 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla
3 cups whipped cream
Mix together pretzels, pecans, brown sugar, and butter. Bake at 400 degrees for 7 minutes on a parchment paper lined cookie sheet. Cool and crumble.
Combine cream cheese, sugar, and vanilla. Fold in whipped cream. Before serving, stir all ingredients together.

Ceaser Salad

Romaine Lettuce
2-3 boiled eggs (sliced)
croutons
chopped green onion
Bacon (crumbled)
lemon juice
Parmesan Cheese (grated)
salt & pepper to taste
Kraft Ceaser dressing


Mix in a bowl. Serve and enjoy!

Chicken Pasta Salad

1 package bow tie pasta, cooked according to package directions
1 package rotini pasta, cooked according to package directions
2 cups red grapes, cut in half
2 cups celery, chopped
1 20-oz. can pineapple tid-bits
4 green onions
4 cooked and diced chicken breasts
2 cups cashews
Dressing:  1 bottle coleslaw dressing, 1 cup mayonaise
Put first 7 ingredients in a large bowl.  Mix together the dressing and mayo and mix all together.
(You can also add 4 diced apples and 1 can water chestnuts, if desired.)

Taco Salad

1 lb. hamburger with onion, salsa, taco seasoning
8 oz. salad dressing and 1 bag of Doritos (If using Nacho Doritos, use Catalina dressing.  If using Ranch Doritos, use Thousand Island dressing.)
3 medium tomatoes, cut up
1 cup shredded cheese
1 can olives, sliced
1 head of lettuce
Mix all together in a salad bowl and serve!

BBQ Chicken Salad

Prepare chicken & almonds in advance.
Place 3 TBSP sugar in a heavy saucepan over med-low heat.  As sugar beings to melt, add 1/2 C sliced almonds. Stir constantly until sugar melts{10 min} Remove from heat & spread in a thin layer on waxed paper. Allow to cool completely.  Break inot small pieces. 
2 Chicken breast halves, 1 TBSP oil, 1/2 C favorite BBQ sauce {huhum..sweet baby rays of course}.
Cut chickenn into cubes. In a skillet stir fry in oil until tender & no longer pink. Add BBQ sauce, mixing until chicken is well coated  chill several hours.
2 C lettuce, 1/4 C shredded carrots, 1/4 c purole cabbage, 1/2 C fresh strawberries, 1 avocado chopped, 1 kiwi chopped 1/3 C dried cranberries {I love craisens}, Add all this together w. almonds and chicken. Coat with this dressing:
Light Poppy Seed Dressing
Mix 1/2 C light mayo, 1 TBSP vinegar, 1/4 C sugar & 1/2 tsp. poppy seeds.

Oriental Chicken Salad

1 Head iceberg lettuce
1 head spinach or romaine (or lettuce of your choice)
Green Onions
Chow Mein noodles (about half a can)

Brown in oven: 2 tablespoons slivered almonds and 2 tablespoons sesame seeds.  Use 2 whole chicken breasts; boil in water, cool and shred.
Prepare salad:  When ready to serve, add noodles, almonds and seeds, and chicken. Toss with dressing

Dressing:
1 tsp. pepper
1 tsp. salt
6 Tbsp. rice vinegar
4 Tbsp. sugar
1/2 c. oil

Chicken Romaine Salad

This is a yummy salad that makes a LOT! I usually only make half of what it calls for and I still end up freezing some of the dressing.

Chicken
6-8 chicken breasts-I seasoned with salt and peper, lemon juice and a little soy sauce (can use less, this is ALOT)
Bake for 30 minutes in 350 degree oven. (I just grill mine) Cool and cut into small pieces.

Sugared Pecans
8 oz. pecans or other nuts, I used almonds the other day (chopped or whole)
4 Table. sugar
In small skillet, sprinkle sugar over nuts and cook over medium heat until sugar is dissolved and nuts are coated.

Salad
2-3 heads Romaine lettuce (others can be used instead), washed and cut
1 head iceburg lettuce, washed and torn (you can use all Romaine or European blend mix)
1 pound bacon, cooked and crumbled
1 c. dried cranberries, Craisins (have also used dried blueberries or a mix of the two)
1 c. shredded Mozz. cheese

Dressing (can make 1/2 or even 1/4 recipe, it makes a lot)
1/2 red onion, or less if onion is large, finely chopped (it was a little strong the last time I made it)
2 c. sugar
4 t. dry mustard
2 t. salt
1 c. red wine vinegar
2 c. vegetable oil

Chop onion using food processor or chop and place in blender.  Add sugar, mustard, salt and vinegar, blend until frothy.  Slowly add oil.

Toss chicken, lettuce, bacon, craisins, and cheese together in large salad bowl.  Add dressing and toss to coat.  Sprinkle nuts on top.

You decide what proportions you need.  Like I said, the chicken and dressing makes a lot compared to some of the other ingredients.

Strawberry Spinach Salad

A dear friend of mine shared this recipe with me, and everyone who has had it LOVES it! Enjoy!

baby spinach, rinsed and torn into bite-size pieces
sliced strawberries
feta cheese
slivered almonds, candied if desired

1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspooon paprika
2 Tablespoons sesame seeds
1 Tablespoon poppy seeds


1. In a large bowl, toss together the spinach, strawberries, feta cheese, and almonds.
2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
